🐟 Malvani Fish Curry (Rassa Style) – Serves 4

🧄 Ingredients:

• Surmai / Rawas / Bangda – 500g cleaned fish pieces

• Onion – 2 medium (sliced)

• Tomato – 1 medium (chopped)

• Ginger-garlic paste – 1 tbsp

• Grated fresh or dry coconut – 3 tbsp

• Tamarind pulp – 1 tbsp

• Oil – 3 tbsp

• Salt – to taste

• Water – as needed

• Coriander – for garnish

🧂 Masalas from Combo:

• Selam Haldi – ½ tsp

• Bedgi Mirchi Masala – 1 tsp

• Fish Masala – 1 tbsp

• Malvani Masala – 1 tbsp

• Kolhapuri Masala – 1 tsp (for extra depth)

🔥 Method:

1. Roast Base:
   Dry roast coconut till golden. Keep aside.

2. Sauté:
   Heat oil, add sliced onions and cook till golden. Add ginger-garlic paste and sauté.

3. Add Masalas:
   Add all masalas (except Fish Masala) and tomatoes. Cook till soft and oil separates. Add roasted coconut and blend into a smooth paste if preferred.

4. Curry Base:
   Return the paste to pan, add tamarind pulp, salt, and enough water for desired rassa consistency.

5. Add Fish:
   Slide in fish pieces gently. Add Fish Masala now and simmer for 7–10 mins on low heat. Do not stir too much.

6. Finish:
   Garnish with chopped coriander. Rest for 10 mins before serving.

• Steamed rice / ukadicha bhaat

• Bhakri (nachni/jowar) for sukka-style variation

• Solkadhi or raw onion salad for cooling contrast
