🍆🥘 Recipe: Bharli Vangi (Stuffed Eggplant – Maharashtrian Style)

🧾 Ingredients:

• Small brinjals – 6, slit crosswise

• Onion – 1, finely chopped

• Roasted peanuts – 2 tbsp, crushed

• Fresh coconut – 2 tbsp, grated

• Tamarind pulp – 1 tsp

• Jaggery – 1 tsp (optional)

• Oil – 3 tbsp

• Salt – to taste

• Coriander – for garnish

🧂 Masalas Used:

• Goda Masala – 1.5 tbsp

• Ghati Masala – ½ tsp

• Malvani Masala – ½ tsp

• Turmeric – ¼ tsp (optional)

👩‍🍳 Method:

1. In a bowl, mix chopped onion, coconut, crushed peanuts, tamarind, jaggery, salt, and all the masalas.

2. Stuff this masala mixture into the brinjals carefully.

3. Heat oil in a pan. Place brinjals in it gently and sauté for 2–3 minutes.

4. Add a splash of water, cover, and cook on low heat till brinjals are soft and the masala is thick and aromatic.

5. Garnish with coriander and serve hot.
