🍲 Zanzanit Mutton Rassa Recipe (Serves 4)

Ingredients:

  • Mutton – 500g (with bone)

  • Onions – 2 large (sliced)

  • Tomatoes – 1 medium (chopped)

  • Ginger-Garlic paste – 1.5 tbsp

  • Oil – 3 tbsp

  • Salt – to taste

  • Water – as needed

  • Fresh coriander – for garnish

Masalas from Combo (Niranjanam):

  • Kolhapuri Masala – 2 tbsp

  • Bedgi Mirchi Masala – 1 tbsp

  • Koli Mix Special Masala – 1 tbsp

  • Garam Masala – 1 tsp

  • Selam Haldi – 1 tsp

  • Special Masala – 1 tbsp


Instructions:

  1. Bhuna Base:
    Heat oil in a heavy-bottom vessel. Add sliced onions and sauté till golden brown. Add ginger-garlic paste and cook until the raw smell goes.

  2. Masala Mix:
    Add tomatoes and cook till soft. Then add Selam Haldi, Bedgi Mirchi, Kolhapuri, Koli Mix, and Special Masala. Fry the masalas well till oil separates.

  3. Add Mutton:
    Add mutton pieces and coat them well in the spicy masala base. Sauté on medium heat for 10–12 mins.

  4. Cook & Simmer:
    Add enough water to make a rassa (gravy). Cover and pressure cook (3–4 whistles) or cook in a pot till meat is tender.

  5. Finishing Touch:
    Sprinkle Garam Masala and simmer for 5 mins. Garnish with fresh coriander.


🍛 Serve with:

  • Bhakri (Jowar or Rice)

  • Steamed Rice

  • Onion-Lemon-Kanda Lasun Chutney on side
