The Essence of Kashmiri Mirchi Masala
Kashmiri Mirchi Masala is a combination of ground Kashmiri chilies, fennel seeds, ginger powder, turmeric, and cardamom. Ingredients:
- 500 grams of mutton, cut into pieces
- 2 tablespoons Kashmiri Mirchi Masala
- 2 onions, finely sliced
- 1 cup yogurt
- 1 teaspoon ginger-garlic paste
- 1 cinnamon stick
- 3 green cardamoms
- 4 cloves
- 2 tablespoons ghee
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat ghee in a deep pan and add cinnamon, cardamoms, and cloves. Sauté until aromatic.
- Add the sliced onions and cook until golden brown.
- Stir in the ginger-garlic paste and cook for 2 minutes.
- Add the Kashmiri Mirchi Masala and mix well.
- Add the mutton pieces and sauté until they are evenly coated with the masala.
- Whisk the yogurt and pour it into the pan, stirring continuously to avoid curdling.
- Add salt and 1 cup of water. Cover and simmer until the mutton is tender.
- Garnish with fresh coriander leaves and serve hot.
