The Essence of Kashmiri Mirchi Masala

Kashmiri Mirchi Masala is a combination of ground Kashmiri chilies, fennel seeds, ginger powder, turmeric, and cardamom. Unlike other chili powders, Kashmiri mirchi is known for its mild heat and vibrant color, which gives dishes a visually appealing red tone while maintaining a delicate balance of flavors.

Recipe: Rogan Josh

Ingredients:

  • 500 grams of mutton, cut into pieces
  • 2 tablespoons Kashmiri Mirchi Masala
  • 2 onions, finely sliced
  • 1 cup yogurt
  • 1 teaspoon ginger-garlic paste
  • 1 cinnamon stick
  • 3 green cardamoms
  • 4 cloves
  • 2 tablespoons ghee
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat ghee in a deep pan and add cinnamon, cardamoms, and cloves. Sauté until aromatic.
  2. Add the sliced onions and cook until golden brown.
  3. Stir in the ginger-garlic paste and cook for 2 minutes.
  4. Add the Kashmiri Mirchi Masala and mix well.
  5. Add the mutton pieces and sauté until they are evenly coated with the masala.
  6. Whisk the yogurt and pour it into the pan, stirring continuously to avoid curdling.
  7. Add salt and 1 cup of water. Cover and simmer until the mutton is tender.
  8. Garnish with fresh coriander leaves and serve hot.
