The Essence of Biryani Masala

Biryani Masala is a fragrant blend of spices such as cinnamon, cardamom, cloves, nutmeg, and star anise. It provides the perfect balance of heat, aroma, and flavor to biryanis and pulaos.

Recipe: Chicken Biryani

Ingredients:

  • Fresh mint leaves for garnish
  • 500 grams chicken
  • 2 cups basmati rice
  • 2 tablespoons Biryani Masala
  • 1 onion, thinly sliced
  • 2 tomatoes, chopped
  • 1 cup yogurt
  • 1 teaspoon ginger-garlic paste
  • 1/4 cup fried onions
  • 2 tablespoons oil or ghee

Instructions:

  1. Marinate the chicken with yogurt, Biryani Masala, and ginger-garlic paste for 30 minutes.
  2. Cook the rice until 80% done and set aside.
  3. Heat oil in a pan and fry the onions until golden.
  4. Add tomatoes and cook until soft.
  5. Add the marinated chicken and cook until tender.
  6. Layer the partially cooked rice over the chicken. Top with fried onions and mint leaves.
  7. Cover and cook on low heat for 20 minutes.
  8. Serve hot with raita or salad.
